The Craft Behind the Smoke

When Pitmaster Jason Dornbush first fired up his smoker in Beausejour, MB, it was a backyard passion project driven by a simple goal: master the primal art of cooking over live fire. Today, Blue Haze Barbecue has evolved into a provincial powerhouse, but our core philosophy remains entirely unchanged. We don’t do fast food, and we certainly don’t just grill.

Authentic BBQ requires unyielding patience. We load our pits with locally sourced oak wood and let our meats render low and slow for anywhere from 6 to 16 hours. We tend to the fire watching for that tell tale sign of a perfect burning fire—the clean, thin blue smoke that gives our namesake its meaning. This meticulous fire management guarantees a deeply caramelized, mouth-watering bark and a picture-perfect smoke ring.

What exactly is the "Blue Haze"?

How far do you travel for private catering?

We proudly serve South, Southeastern, and Central Manitoba. Let us know exactly where your celebration is taking place, and we will hit the road.

How far in advance should I book the truck?

Summer weekends and prime festival dates fill up fast. We highly recommend reaching out at least six months to one year in advance for weddings and major corporate gatherings to secure your preferred date.
